To start, you’ll want to preheat your oven to 375 degrees and line a muffin tin with paper liners. In a large bowl, sift together your dry ingredients: flour, sugar, baking powder, and salt. Once your dry ingredients are mixed, you’ll add in the wet ingredients—melted butter, an egg, and milk. Stir everything together until just combined– overmixing can lead to tough muffins, and no one wants that.
The final step is adding a heaping 2 cups of fruit cocktail to the batter. You’ll want to make sure the fruit is well drained and you can even chop it into smaller pieces, if you’d like the fruit bits spread more evenly throughout the batter. Gentle fold in those juice pieces of fruit and then it’s time to scoop the batter into your prepared muffin tin.
The muffins bake for just over 20 minutes. You’ll know they’re done when the tops are slightly golden and an inserted toothpick comes out clean.
