Chorizo basil spaghetti is a tremendous meal filled with fresh and fulfilling flavor. It takes only a short time to whip up, offers tremendously zesty, lively ingredients, and makes a great option for future meals. You can cook a big batch to feed the entire family, or keep it adult-oriented and enjoy it both fresh and as a make-ahead meal for work or on days when you just want to heat and eat.

The Elderton household, filled that it is with small, at times capricious children, veers mostly between bolognese or carbonara when it’s time to carb up and enjoy a spaghetti dish. Either dish is tasty and reliable, but hardly the stuff that pasta dreams are made of. My wife and I, ardent pasta fans that we try to be, have started incorporating a chorizo-based spaghetti sauce into our dinner plans to take advantage of nights when the kids want chicken nuggets or just vegemite on toast.

Chorizo basil spaghetti smoothly applies many of our favorite flavors in one dish. Spanish chorizo is bright and spicy, but also subtle enough to contrast delightfully against the fresh basil and earthy garlic. A splash of citrus helps cut through the sausage’s fat, while salty olives provide sharpness that rounds off the rich flavors, with a touch of luxury added from freshly grated parmesan.

This is a restaurant-quality pasta dish that comes together quickly from everyday ingredients found in the pantry and herb garden. The recipe seems decadent (and therefore time consuming) but comes together quickly, exactly what makes it works so well for households like mine, where there’s a lot of action and noise at dinner time but sometimes not enough flair and excitement. This meal gives you an easy option to make something notable without having to stress about time or ingredients, and it tastes absolutely smashing!

Ingredients
  • 2 Spanish Chorizo sausages, sliced
  • 1/4 cup lemon juice
  • 8 oz. Spaghetti No. 5 (or similar)
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons minced garlic
  • 1 x 14 oz can diced Italian tomatoes
  • 1/3 cup fresh basil, chopped coarsely
  • 1/4 cup black olives, pitted
  • 1 teaspoon onion powder
  • Kosher salt & black pepper, to taste
  • Grated parmesan cheese, as required
Preparation
  1. Cook the pasta according to package instructions. Drain and set aside spaghetti after running through a tablespoon of the olive oil. Keep a cup full of the starchy water back, to use in emulsifying the tomato sauce.
  2. Using a large, pre-heated frying pan, add the lemon juice, garlic, onion and chorizo, cooking at medium-high until meat is light brown.
  3. Add tomatoes and olives, and stir through starchy water. Lower pan temperature and simmer sauce for 5-10 minutes, stirring occasionally.
  4. Add the cooked pasta and fresh basil, and thoroughly combine with the chorizo sauce. Season with salt and pepper, add grated parmesan, and serve immediately.
