INGREDIENTS FOR THE CRUST:

– Cooking spray

– ½ c. (1 stick) of softened butter

– ½ c. packed brown sugar

– ¼ c. granulated sugar

– 1 large egg

– 1 tsp. pure vanilla extract

– 1¼ c. all-purpose flour

– ½ tsp. kosher salt

– 1 c. semisweet chocolate chips

INGREDIENTS FOR THE CHEESECAKE:

– 2 (8-oz.) blocks cream cheese, softened

– ¼ c. sour cream

– ⅔ c. granulated sugar

– 3 large eggs

– 1 tsp. pure vanilla extract

– 1 tsp. kosher salt

– Blue food coloring

– 1 c. mini Chips Ahoy

– ½ c. mini Oreos

INSTRUCTIONS:

– While your oven is preheating to 350°, line a 9”-x-9” baking pan with parchment paper (leaving a 2” overhang on the sides) and spray with cooking oil.

– In a large bowl, use a hand mixer to beat the butter and sugar together.

– Next, mix the eggs, vanilla, flour, and salt while folding in chocolate chips.

– Press the dough into the pan and bake for 20 minutes. Reduce oven to 325°.

– In a larger bowl, beat cream cheese, sour cream, sugar, eggs, vanilla, and salt and beat until smooth. Add blue food coloring until the desired color is reached.

– Next, pour your batter over the crust and smooth the top, then sprinkle oreo cookies on top.

– Bake your cheesecake in the oven until the center slightly jiggles (around 30 to 40 minutes). Turn off oven, prop the oven door open and let cheesecake cool for 1 hour.

– Refrigerate cheesecake at least 4 hours and if possible, overnight.

– Cut it into squares and serve.
