I have been trying to sneak more protein into my daily diet and it’s not always easy. I’m not big on protein powders or bars, so sources like greek yogurt and cottage cheese have been staples for me. While I do really love cottage cheese, it can get a little boring after a while… and that’s where this Chunky Monkey Ice Cream comes in! There’s nothing better than reaching your nutrition goals by eating dessert and that’s exactly what this dish is. With about 16 grams of protein per serving (it will vary slightly depending on the exact product you use), this sweet treat is sure to become a new fav.
The process couldn’t be much easier here. You’ll start out by adding cottage cheese, honey, peanut butter, a banana, and a splash of vanilla extract to your blender or food process. Blend the mixture for 1-2 minutes, or until completely smooth. Give it a taste at this point and add a little more sweetener or peanut butter to your liking. Toss in some chocolate chips and give it one final stir.
For a finishing touch, swirl in a ribbon of peanut butter and then pop your dish in the freezer for about 4-6 hours. Once it’s frozen through it’s time to dig in! Whether you enjoy a few scoops or just sneak a bite or two when a sweet craving strikes, I know this fun and easy treat will be a new to-go!
Chunky Monkey Cottage Cheese Ice Cream

Ingredients
- 1 (16 oz) tub full fat cottage cheese
- 1/3 cup honey
- 1/3 cup peanut butter
- 1 ripe banana
- 1 teaspoon vanilla extract
- ½ cup chocolate chips
Preparation
- Add cottage cheese, honey, peanut butter, banana, and vanilla to food processor and blend until fully smooth, about 1-2 minutes.
- Taste mixture and add more honey or peanut butter to taste.
- Mix in chocolate chips and transfer to a dish or container for freezing. Swirl in additional peanut butter with a knife if desired.
- Freeze for 4-6 hours or until frozen through.
