When we think of frozen treats, our minds immediately go to a pint of ice cream or a box of novelty frozen treats, but there’s a world of uncharted territory — frozen treats don’t have to be expensive to make and don’t require an ice cream machine.

Here a base of thick Greek yogurt is sweetened with honey or sugar, flavored with vanilla, and then mixed with a load of fresh cut-up strawberries.

Using a tablespoon as a measurement, portioning out two heaping tablespoons onto a parchment-lined sheet. Set the tray of clusters in the freezer until they firm up.

Once fully frozen, dip each cluster in melted chocolate, making sure the bottom, top, and sides are completely covered. Repeat the process with the remaining clusters and put them back into the freezer to firm up the coating.

The result? Absolutely addictive! These clusters have a creamy texture, thanks to the Greek yogurt.

The strawberries are the perfect size, making for small bursts of fruit with each and every bite. Chocolate is the rich, decadent companion to the fruity interior. When you bite into the cluster, the chocolate first cracks like the coating on an ice cream bar, but then becomes a creamy melty delight in a matter of milliseconds.

Ingredients
  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek Yogurt
  • 1 tablespoon honey, granulated sugar, or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil
Preparation
  1. In a large bowl mix together strawberries, yogurt, honey, and vanilla.
  2. Add scoops of the yogurt mixture (about 2 tablespoons each) onto a parchment-lined baking sheet. You should be able to make 10 clusters.
  3. Place the baking sheet with the clusters in the freezer for 1 to 2 hours.
  4. When the clusters are fully frozen, put the chocolate and oil in a microwave-safe bowl and melt the chocolate in 30-second intervals, whisking between each interval, until completely melted.
  5. Carefully dip each frozen cluster into the chocolate, making sure they are completely coated.
  6. Transfer back to the parchment paper. Repeat this process with the remaining clusters.
  7. Transfer the tray with the clusters back in the freezer for another 5 to 10 minutes to firm up the clusters.
  8. These keep in the freezer for 4 weeks in a freezer bag.
