Chocolate Chip Quick Bread

If you’ve ever wished you could get away with eating chocolate chip cookies for breakfast, boy do I have the perfect quick bread for you. It’s this Chocolate Chip Quick Bread! And it’s simple to make but probably even easier to enjoy… because it’s stuffed with chocolate chips! As easy as a loaf of banana bread, but you don’t need to wait for any bananas to get spotty, and it fits the same bill — a delicious bread that works for breakfast, afternoon snack, or after dinner treat.

I love this bread because I always have the ingredients on hand for it.

You just whisk together flour, baking powder, and salt, and then set it aside.

And then whisk together melted butter, sugar, eggs, and a touch of vanilla.

Add a third of the flour mixture to the wet ingredients…

… and then alternate with the milk…

Until you have a batter. It’s a batter you don’t even need to get your mixer out for — you can use a whisk until it’s time to stir in the chocolate chips, at which point any kind of spoon will do.

And you want a hefty portion of those chocolate chips, a cup and a half will do.

Transfer it to a loaf pan. (This makes one loaf.) And bake.

You get a soft and moist crumb that’s a little reminiscent of vanilla cake, and it’s positively studded with chocolate chips. If you can’t resist and you cut into this right away, they’ll be soft and melty, but if you have patience, they’ll harden back up as the bread cools and then they melt in your mouth. Either one is a nice experience.

This is one of those quick breads that walks a fine line between being cake and bread, but I’m not complaining. The simple vanilla crumb lets the chocolate chips shine… but chocolate always does have a way of stealing the show, doesn’t it?

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 1/2 cups chocolate chips
Preparation
  1. Preheat oven to 350°F. Lightly grease and flour a 9x5-inch loaf pan. Set aside.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a separate bowl, whisk the butter, sugar, eggs, and vanilla extract until well combined.
  4. Mix in one third of the flour mixture, stirring just until smooth, followed by half of the milk. Repeat with remaining ingredients, alternating dry and wet.
  5. Stir in chocolate chips.
  6. Transfer batter to prepared loaf pan and bake until a toothpick inserted into the center comes out clean, 45-50 minutes.
  7. Set pan on a wire rack to cool, then remove from pan, slice, serve, and enjoy!
