Chinese takeout was always a special treat as a kid. I loved opening those white boxes full of saucy and flavorful dishes, a far cry from the kind of food my midwestern family made at home. This sweet, buttery cookie had a subtle nutty flavor and just the right amount of crunch. I was reminded of them recently and thought it was high time I tried making them at home.
I started researching and was delighted to see how simple the recipe was. The dough comes together with baking staples, so I didn’t even have to run to the store. Can’t beat that. The one step that will require some patience is chilling the dough before baking. I opted to leave it in the fridge overnight and was very happy with my final results.
They baked to a beautiful golden color thanks to the egg wash and really did taste just as I remember. Chinese Almond Cookies

Ingredients
- 1 ⅓ cups almond flour
- 1 cup butter, room temperature
- 1 egg
- 1 ½ teaspoons almond extract
- 2 cups flour
- 1 ¼ cup granulated sugar
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup sliced almonds
- 1 egg, beaten, for egg wash
Preparation
- In a large bowl, combine almond flour and butter, then mix until smooth. Add one egg and almond extract and mix until just combined.
- Mix in flour, sugar, baking soda, and salt until ingredients are fully incorporated.
- Wrap dough tightly in plastic wrap and chill for 4 hours or overnight.
- When ready to bake, preheat oven to 325 degrees F and grease two baking sheets with parchment paper.
- Roll dough into small balls (about 1 ½ tablespoons portions), arrange on baking sheets, and press down to flatten. Press sliced almonds into the top to decorate and brush top with egg wash.
- Bake for 12-14 minutes or until edges just begin to turn golden in color.
- Allow cookies to fully cool before handling.
