Does anyone else remember when Chick-Fil-A had this Carrot Salad on their menu? I was a huge fan and so bummed when they stopped serving it. Luckily, I’ve gotten my hands on a copycat recipe and it really does taste just as I remember. If you’ve also been missing this sweet and tangy salad then this recipe is a must-try! And, if you’ve never had the pleasure of trying it then you are in for a real treat!
With only six ingredients, this salad is a breeze to throw together. Start out by shredding about a pound of carrots and mixing them with a can of crushed pineapple, shredded coconut, and raisins. Toss it all together and then mix in the simple dressing of mayo and sugar. Cover your salad bowl tightly with cling wrap and pop it in the fridge for a couple hours to let the flavors all meld together.
This salad obviously makes a perfect side to fried chicken, but also compliments many other main dishes and makes for a perfect summer potluck dish. You can easily make it a day ahead of time so you have one less thing to worry about when entertaining or trying to get out the door. Chick-Fil-A Carrot Salad

Ingredients
- 4 ½ cups shredded carrots
- 1 (8 oz) can crushed pineapple in juice
- ½ cup shredded sweetened coconut
- ½ cup raisins
- ½ tablespoons granulated sugar
- ½ cup mayo
Preparation
- In a large bowl, combine carrots, pineapple with juices, coconut, and raisins. Toss to combine.
- Mix in sugar and mayo until fully combined.
- Cover tightly and chill for 1-2 hours or overnight.
