Cheesy Cauliflower Garlic Bread

When trying to go keto or even just reduce your overall carb intake it can be hard to find recipes and meals that hit the spot and also have a healthy balance of nutrients. With this Cheesy Cauliflower Garlic Bread you get the best of both worlds- a tasty side dish made with veggies that tastes as good as a “regular” garlic bread. Plus, this recipe is nut, soy, and grain free which makes it ideal for people with allergies to these ingredients.

To start this recipe off you’ll need to roughly chop 1 large or 2 small heads of cauliflower. I ended up using 1 1/2 medium-small heads for this recipe, but the sizes can vary quit a bit at the grocery.

The next step is to pulse the cauliflower in the food processor. You don’t need it to be a paste, but like rice is an ideal texture. Then add in the the rest of the dough ingredients, including some eggs and cheese. This helps it stay together and makes a bread that’s easy to slice, not to mention super delicious.

Once you have your dough made spread it over a parchment-lined baking sheet and level it off with the back of a spoon or a icing spreader or spatula. You want to make it as even as possible.

After the first bake add the garlic butter and some cheese on top and then bake it again. You’ll know it’s ready when the edges are golden brown and crispy and the cheese on top has started to develop some color as well.

As an extra punch of flavor you can add some red pepper flakes on top, too. I love adding a very generous couple of dashes, but this is down to personal taste. Add as much or as little spice as you want.

Serve this with some warm marinara sauce or enjoy without. It’s mouthwateringly good either way and each bite has that cheesy garlic flavor that takes a meal from good to great.

Ingredients
  • 1 large head cauliflower (or 2 small heads)
  • 2 eggs
  • 3 cups shredded mozzarella, divided
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons salted butter, melted
  • 3 cloves garlic, minced
  • crushed red pepper flakes, optional
  • marinara sauce for dipping
Preparation
  1. Preheat oven to 400˚F. Chop cauliflower into large florets. Place into food processor in batches and pulse until fine in texture, like rice.
  2. Add cauliflower to large bowl along with egg, 1 cup mozzarella cheese, parmesan cheese, garlic powder, oregano, Italian seasoning, salt, and pepper.
  3. Line rimmed baking with parchment paper. Spread in loaf shape over parchment. Mixture may not reach sides of pan. Spread to ½” thickness. Bake for 25 minutes or until golden brown on top. Remove from oven.
  4. Combine butter with garlic. Spread over crust and the top with remaining cheese. Sprinkle with red pepper flakes to taste, if using.
  5. Return pan to oven and bake for 5-10 minutes or until browned on top. Allow to cool for 5 minutes before serving.
  6. Slice into stripes and serve with warm marinara sauce.
