The recipe starts out with making up some homemade whipped cream. Beat the heavy cream and powdered sugar until very stiff peaks form. If your whipped cream is too soft the rolls won’t hold up as well so don’t bail early on the mixing! Once beaten, set the cream aside and add the cream cheese, butter, and vanilla to another bowl and mix until it’s nice and smooth. Gently mix in the whipped cream and pudding mixes for that delicious vanilla flavor. Fold in the berries and then pop the filling in the fridge for about 30 minutes to set up.

After the filling has chilled it’s time to assemble. Spread a thin layer of the cheesecake mixture over each tortilla and roll up tightly. Use your sharpest knife to slice the roll into small rounds (and marvel at how gorgeous that cross cut is!). Place your creations on a serving plate and then it’s time to indulge. I can bet that everyone is going to want seconds of these sweet treats!

Ingredients
  • 3/4 cup heavy whipping cream
  • 3 tablespoon powdered sugar, for whipped cream
  • 1/2 cup butter, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 cup powdered sugar
  • 2 (1 oz) packages instant vanilla pudding mix
  • 3/4 cup fresh strawberries, diced
  • 3/4 cup raspberries
  • 1/2 cup fresh blueberries
  • 6 large burrito-size flour tortillas
Preparation
  1. Pour heavy cream into a large bowl or stand mixer and mix until soft peaks form. Add powdered sugar and continue mixing until very stiff peaks form.
  2. In another large bowl, mix together the cream cheese, butter, vanilla extract and remaining powdered sugar.
  3. Mix in the whipped cream and pudding mix until smooth, then gently fold in the fruits.
  4. Cover bowl with plastic wrap and chill for at least 30 minutes.
  5. When ready to assemble, place a tortilla on a cutting board and spread filling in a thin layer over the whole surface. Roll tightly, then use a sharp knife to cut the roll into bite-sized pieces. Repeat process with the remaining filling.
  6. Pinwheels are best served shortly after assembly.
