A savory fruit tart with a spread of whipped cheese on a puff pastry base. Serve it up with your favorite grilled fruits and a few caramelized onions. This is an incredibly simple and unconventional appetizer that appeals to everyone. It has that flakey crust with a schmear of cold tangy goat cheese and the tender bite of a warm sweet plum. It makes a great party snack and they’re even better the next day.

Like I said before, this recipe is very simple. It’s three separate components that makes one assembled appetizer that serves the whole crowd. Cook the fruit, whip the cheese, and bake the pastry. The puff pastry makes the tart, but the fruit and cheese are ultimately customizable. A great way to elevate any party or potluck.

We don’t see a lot of plum recipes outside of desserts and I’m really proud of how this came out. Any stone fruits really work in place of plums, but be sure to maintain the texture of the fruit. Do NOT overcook them. The texture is what makes it satisfying.

I am a big fan of goat cheese with fruit, but I also LOVE it’s tangy flavor. If you are not a fan, sub the goat cheese for cream cheese or even ricotta cheese it will still have the same effect. The creaminess ties the fruit to the puff pastry and makes it all work.

Customize these tarts the way you like them. I enjoy finishing the final product with a drizzle of something sweet like honey or balsamic, and a bite of a fresh delicate herb like basil, mint, or tarragon.

Ingredients
  • 1 tablespoon olive oil
  • 1 cup sliced red onion
  • 2 sprigs fresh thyme
  • 1 tablespoon unsalted butter
  • 2 - 3 red or white plums, pitted and sliced
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 1 sheet puff pastry
  • 2 tablespoons mascarpone cheese
  • 2 oz. goat cheese or ricotta or cream cheese
  • 3 tablespoons fresh basil, finely chopped.
  • Egg wash, for brushing
  • Honey, for drizzling
Preparation
  1. Preheat the oven to 400˚ F and prepare a parchment-lined sheet tray.
  2. Cut the puff pastry into 6 even rectangles and place them onto the prepared tray. Brush the tarts with an egg wash all over.
  3. Bake tarts for 20 - 22 minutes or until the pastry is puffed and golden.
  4. In a sauté pan over medium-high heat, add olive oil and cook onions until softened. Around 3 - 5 minutes.
  5. Add fresh thyme to the onion and continue cooking on low for 1 minute. Remove onions to a bowl.
  6. Add melted butter to the pan with plums and sugar over low heat.. Lightly cook the plums until softened, then hit them with a splash of balsamic vinegar. Set aside.
  7. In a bowl, mix together the mascarpone with goat cheese, then lightly season with salt. Set aside.
  8. Assemble your tarts with a spread of cheese on each, followed by cooked onions, then plums. Drizzle with honey and garnish with basil.
