Charred Broccoli and Feta
Our charred broccoli and feta is a crowd-pleaser, one that we’ve found even the kiddos enjoy!
Beautifully cooked broccoli is an ideal weeknight side dish; “beautifully cooked” means simple yet flavorful. Slightly charred, al dente broccoli will be a go-to side dish and is a delightful companion to our Crispy Chicken Piccata. Chef Dom demonstrates his method for perfect broccoli in color, texture, and flavor.
Our charred broccoli and feta is a crowd-pleaser, one that we’ve found even the kiddos enjoy, probably because they’re not overly steamed and soggy, or just plain raw, but instead, they’ve been roasted to a delicious perfection.
By roasted, we mean pan-roasted. Our process is to take the fresh broccoli florets and toss them in a hot pan with olive oil, salt, and pepper. Then, Chef Dom puts a lid over the pan; this will both char and steam the broccoli to give it both texture and flavor. The broccoli is finished just a few minutes later, after adding garlic and red pepper flakes to infuse the veggie with even more goodness.
To serve, toss the broccoli with some chunks of salty-creamy feta cheese and lemon juice – this will add not only that element of freshness but it also balances beautifully the broccoli’s already earthy flavor. Our Charred Broccoli and Feta is served with a Crispy Chicken Piccata for a weeknight dinner that is quick and delicious. Enjoy!
