Ingredients
  • 8 chicken thighs
  • 1 cup apricot jam
  • 3-4 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 ½ tablespoons dijon mustard
  • ¼ cup finely diced onions
  • 2 teaspoons garlic powder
  • 1 teaspoon ground ginger
  • salt and black pepper to taste
Preparation
  1. Preheat oven to 375 degrees F.
  2. Trim fat from chicken thighs and place in a greased 9x13-inch baking dish.
  3. Lightly season the chicken with salt and pepper to taste (keep in mind the soy sauce will add additional salt!).
  4. Spoon jam onto chicken, followed by the dijon, soy sauce, and honey. Use a spatula mix and cover the chicken with the sauce.
  5. Sprinkle on garlic powder, ginger and onions.
  6. Bake for 25 minutes, then quickly remove dish from oven and spoon the sauce from the bottom of the dish onto the chicken. Return to oven and bake for 15-20 more minutes, or until internal temperature reaches 165 degrees F.
  7. If desired, spoon additional jam on top of chicken before serving.
