These are the perfect cookies to bring to your next get together! Almond Joy Cookies are just as easy to throw together as regular old chocolate chip cookies, with just a few extra ingredients. Don’t get me wrong, I’m a huge fan of chocolate chip cookies, but it’s nice to have a few variations on hand!

Almond Joys are one of my absolute favorite candy bars. It’s a simple and delicious combination – chocolate, almonds, and coconut. It shouldn’t be as amazing as it is, but there’s no denying how delicious these candy bars are. Now you can have them in cookie form!

These cookies pack all of the sweet, rich, and buttery flavors you love about chocolate chip cookies while incorporating sweetened coconut flakes and sliced almonds into the mixture. You’ll be surprised at how much these taste like the real thing. Add in the soft center of the cookie plus the slightly crispy edges, and you’ve got yourself a winning recipe.

As I said earlier, the base of this recipe is basically the same as a regular chocolate chip cookie recipe. You’ll combine flour and baking soda in one bowl, and your wet ingredients, (egg, butter, sugars, and vanilla) in a separate bowl. Then, add the dry ingredients to the wet ingredients slowly, mixing until just combined.

Next, fold in chocolate chips, coconut flakes, and almond slices. Drop the cookie dough onto a prepared sheet pan by the spoonful and bake for 9-12 minutes. The rounded cookie shape helps keep the moisture inside while still giving you that nice cookie crunch! Try out this recipe today, you won’t regret it!

Ingredients
  • 1 1/8 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter softened
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups semi sweet chocolate chips
  • 1 cup sweetened coconut flakes
  • 3/4 cup sliced almonds
Preparation
  1. Preheat oven to 350°. Line two baking sheets with parchment paper and set aside.
  2. Combine flour, baking soda, and salt in a small bowl; set aside.
  3. Cream butter and sugars with a hand mixer. Add vanilla and egg, mixing until just incorporated.
  4. Slowly add the dry ingredients into the butter mixture.
  5. Fold in chocolate chips, coconut flakes, and sliced almonds.
  6. Using a spoon, drop dough on prepared cookie sheets by the spoonful. Bake for 9-12 minutes.
