Not everyone loves mushrooms, but if you do like the taste then you probably really like them. I’ve been both of these people and still can’t describe why they are such a polarizing food.

As a kid I thought they were slimy and tasteless at best, and at their worst they had an earthy flavor that would keep me from trying foods that had even the tiniest bit of mushrooms in. Fast forward to early adulthood and I suddenly didn’t hate mushrooms. Now years later I really enjoy them. They have this dark, meaty flavor that you can deepen if you caramelize them or brighten if you pair them with the right herbs. They’re less expensive than meat and they take very little effort to prepare well. For all of these reasons and more, I’m a big fan now.
