Twix Cookies

A 5-ingredient way to make one of my favorite caramel cookies out there.

Ritz crackers act as the perfect base to this well-known candy Twix. Typically containing an airy shortbread cookie, these crackers have the same buttery and airy texture to work as the perfect Twix base. These cookies are stacked with a range of different textures and flavors and it’s only FIVE ingredients. I melted Kraft caramels over Ritz crackers in the oven, then I sandwiched another Ritz on top before dipping them into tempered milk chocolate. The caramel does set back up for an addicting chew that may not exactly resemble a Twix bar, but still has that addictive crunch.

Sandwich the hot caramel between another cracker and watch the candy ooze out. At this point your cookie is ready to be dipping in tempered chocolate. It’s important that you learn this technique while making this recipe because these candies cannot be refrigerated without the caramel from turning crunchy. Store these in an air-tight container as soon as the chocolate sets up.

Get creative with these cookies and melt different candy in-between each Ritz. I’ve seen Rolos melted and even a popular Ritz dessert using a spread of peanut butter. Once you have the tempered chocolate these cookies can be made in less than 10 minutes. Gift these as a holiday cookie to your loved ones or share these with the neighbors.

I finished these cookies up with drizzles of my remaining melted chocolate just to make them look a little sexier. You can add sprinkles or different colored white chocolates to make these seasonal, so get your kids in the kitchen with you this year and have them help decorate each cookie. You won’t regret it.

Ingredients
  • 1 bag Kraft caramels, unwrapped
  • 4 cups mini chocolate chips
  • 6 cups whole ritz crackers
  • 1/2 cup white chocolate
  • Flakey salt
Preparation
  1. Preheat a 350° F and prepare a parchment-lined sheet tray.
  2. Arrange half the Ritz crackers along sheet tray and top with one pieces of unwrapped Kraft caramel. Bake in the oven for 8 - 10 minutes or until the caramel is very soft.
  3. In a double boiler, let your chocolate chips melt and stir with a spatula. Use a candy thermometer to temp the chocolate to about 118°. Remove from the double boiler and stir until chocolate reaches 84°. Replace the bowl over the simmering water and stir again until the chocolate registers at 89° F.
  4. Top each melty caramel Ritz with another cracker and then coat in tempered chocolate using a fish spatula to ensure not too much chocolate is coated.
  5. In another bowl over the same double boiler, let the white chocolate melt.
  6. Let the chocolate fully cool on the sheet pan at room temperature. Once cooled drizzle the white chocolate with a small spoon. Top with flakey salt and enjoy!
