Tex-Mex Meatloaf

There are so many wonderful ways to enjoy meatloaf, from Korean style to Greek. This Tex-Mex version is loaded with spices to give it that border flavor that so many of us love – along with the comforting flavors of meatloaf. It’s a wonderful way to spice up an old favorite.

The flavorings for the sauce that you spread on top of the meatloaf build on the flavors of barbecue sauce, but with some added sweetness from brown sugar and Mexican flavor from ground cumin and chili powder.

Mixed in with the meat is some salsa and plenty of spices for more of that taste we love so much. It reminds me taco night- but in meatloaf form!

For this recipe you can use either freshly chopped parsley or cilantro, but this meatloaf benefits from some of that freshness that only just-picked herbs can provide.

We’re putting some sliced red pepper rings on top partway through baking for both flavor and decoration. But, if you want more heat you can use pickled jalapeño instead or in addition. Or use any peppers you like on top. Slice them thinly so that they can soften in the oven and get just a bit charred on the edges.
