Take an egg and you can cook it a hundred and one different ways, they are just that versatile. And even though classic scrambled eggs are a surefire preparation to please everyone, once in a while it’s good to change it up a bit. When I came across this simple trick for eggs, I knew I could revive my once dull breakfast without a lot of effort.
This recipe requires two bowls but the preparation is simple. Start by separating three large eggs. Whisk the egg yolks with ¼ teaspoon of salt and set aside and in the second bowl whisk the egg whites with 1 tablespoon of sugar, whipping until fluffy. In the video they used a simple whisk, but you can use a hand mixer which will speed up the process and save your wrists the hassle.
Once the egg whites are whipped into soft but firm peaks, pour in the egg yolks, folding them together, the mixture will be pale yellow in color. The mixture will look a little less firm, but it will still be fluffy.
Butter a skillet (preferably non-stick), spread the egg mixture out into an even circle, and cover the pan with a lid for a minute to cook it through. Use a spatula to gently fold the omelet in half. Don’t try to use your fingers for this step — even though you have the omelet cooking on low heat, it’s still hot, so use another spatula to maneuver it onto its side. By pressing the side of the omelet into the hot pan, you will ensure that the eggs are fully cooked.
It may seem simple, almost too simple, but the texture of the omelet is unparalleled. This omelet is fluffy, light, and balanced with a little bit of salt and sugar to accentuate the natural flavors of the egg itself. So when you’re in a pinch and your pantry is spartan of fun mix-ins, this simple whisking will transform the texture into an omelet you’ve yet to taste.
