Strawberry cobbler on the stovetop
Flicker/Mark

I’ve had all kinds of cobbler from berry to peach to apple and everything in between. I haven’t encountered a recipe quite like this before, and I couldn’t wait to try it out! I’m sure glad I did, because this strawberry cobbler with lemon biscuits just might be my new favorite summer dessert!

This dish includes a sweet and slightly tart strawberry filling and is topped with melt-in-your-mouth, homemade lemon biscuits. It sounds like a lot of work, but this recipe is actually quite easy. Anyone can throw this together and have a delicious dessert in just over an hour! Keep reading to see how it’s done.

To get started on this scrumptious cobbler, preheat the oven to 350 degrees and grease a deep dish 9” or 10” pie plate. You can also use a 9×9 or 9×13 baking dish if you prefer. Next, mix strawberries, flour, cinnamon, lemon juice, and sugar together. Spread this strawberry mixture evenly in the bottom of the pie plate or baking dish.

Then, mix flour, sugar, baking powder, salt, and lemon zest together. Make a well in the center of the ingredients and pour in melted butter, heavy cream, and lemon juice. Mix until all ingredients are combined. Spoon dollops of biscuit dough all over the top of the strawberries. Sprinkle with raw sugar, if desired.

All that’s left is to bake for 40-45 minutes, or until biscuits are golden brown on top and the filling is bubbling. Once the cobbler is cooled, top with whipped cream or ice cream and additional strawberries. Trust me, this is one summer dessert you won’t want to pass up!
