Ingredients
- 1 (16 oz) bag cabbage coleslaw mix
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeno, deseeded and finely chopped
- 1 ⅓ cup frozen corn, thawed
- 1 (15 oz) can black beans, drained and rinsed
- ½ cup green onions, chopped
- ⅓ cup fresh cilantro, chopped
Dressing
- 3/4 sour cream
- 1/4 cup water
- juice of 1 lime
- 2 1/2 tablespoons cilantro, minced
- 2 teaspoons chili powder
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Preparation
- Combine all salad ingredients in a large bowl and toss to combine.
- In a small bowl, mix together all dressing ingredients until smooth. Add water 1 tablespoon at a time if dressing is too thick.
- Pour dressing over salad and toss again until evenly coated.
- For best flavor, chill salad for a minimum of 30 minutes before serving.
