I’m always on the hunt for new slow cooker recipes! Soups, sides, main dishes, desserts, I’m here for it all. Today’s recipe is a slow cooker side with corn, diced ham, and a creamy, cheesy sauce that brings everything together. This is comfort food at its finest and makes for one amazing accompaniment for any meal.
Seasoned with onions, garlic, and parsley, this dish is full of flavor. Add in cream cheese, a heaping helping of Velveeta, and seared ham, and this is corn like you’ve never had before! Let’s see how it all comes together in the video below.

As with most slow cooker recipes, this one is simple and only takes a few minutes to throw together. Start by adding olive oil to a large skillet over medium heat. Place the diced ham into the pan, searing it slightly before adding it to the slow cooker.
Next, pour in frozen corn, onion, pepper, garlic powder, and parsley to the slow cooker. Stir to combine. Cut Velveeta and cream cheese into squares and place on top of the corn mixture. Set the slow cooker to high and cook for 2 hours, stirring about halfway through.

Ingredients
- 2 cups diced ham
- 1 tablespoon olive oil
- 36 oz. frozen corn (3-12 oz. bags)
- 1 sweet onion, diced
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 pound Velveeta cheese
- 8 oz. cream cheese
Preparation
