St. Patrick’s Day is just around the corner, and people around the world, both Irish and otherwise will be making a dinner of corned beef and cabbage. Not everybody, however, has the time to put it together and wait for it to cook, so you might want to try this delicious recipe in your Instant Pot.

Corned beef and cabbage typically takes up to four hours to cook in the oven but you will be getting it done in about half the time using the Instant Pot. And yes, prep time is included!

Something else you will appreciate about using the Instant Pot to make your St. Patrick’s Day meal is that you will not be using many dishes. Create the meal and serve it on a large platter. Your family will love it and you will have less clean up in the kitchen.

Make sure you have the following ingredients on hand:

1 teaspoon mustard seeds

1 teaspoon black peppercorns

12 juniper berries

6 allspice berries

2 dried bay leaves

3-4 pounds flat-cut corned beef brisket, trimmed of excess fat

1 yellow onion, peeled and quartered

3 cloves garlic, smashed and peeled

1 1/2 pounds carrots, peeled and cut into 3-inch pieces

1 1/2 pounds small red potatoes

1 ½ pounds green cabbage, quartered lengthwise

Whole-grain mustard, for serving
