Homemade Vanilla Pudding Dry Mix
This scratch-made vanilla pudding mix is sweet, creamy, and delicious.
Now before you groan at the thought of plain vanilla pudding, this is homemade, not from a box, and we bet you’ll enjoy it far more than you might think. We all know that food made from scratch is almost always better than when it comes from a package. So when we discovered this beyond-simple recipe for dry vanilla pudding mix, we couldn’t believe it was possible. Turns out, the mixture is super easy to put together and will keep for up to six months (in an airtight container) but once you realize how delicious this is, we highly doubt it will last that long in storage (because you’ll have made all of it!).
The dry mix itself is just vanilla bean seeds, cornstarch, dry milk powder, sugar, and salt. Give everything a good stir and a good shake in the container to make sure they’re all evenly blended. Now, to make the pudding we add milk, and butter to the dry mix and heat the ingredients together on a stovetop. In a matter of minutes, we’ve whisked together a rich and creamy vanilla pudding that is luxurious and sweet. That’s it! So simple it’s almost silly.
Our homemade vanilla pudding can be served in every way imaginable. In a pudding pie, in little dessert dishes, and topped with fresh fruit and whipped cream. Really, the sky’s the limit, so don’t think of plain vanilla pudding as something boring and dull. It is a fresh canvas for you to decorate however your sweet tooth desires. This is a wonderful recipe for the kiddos to get involved in (of course, under adult supervision during the cooking process) and a fun way to be creative with our food. Dry Vanilla Pudding Mix

Ingredients
- Dry Mix:
- 1 cup cornstarch
- 1 cup dry milk powder
- 1 ½ cups sugar
- 1 teaspoon kosher salt
- 2 vanilla beans, seeds scraped
- To Make Pudding:
- 1 cup dry pudding mix
- 2 cups milk
- 1 tablespoon unsalted butter
Preparation
- Slice vanilla bean in half lengthwise and scrape out seeds. Mix vanilla bean seeds together with cornstarch, milk powder, sugar, and salt. Store mix with vanilla bean pods in an airtight container for up to 6 months.
- To prepare pudding, take 1 cup of pudding mix and add it to 2 cups of milk, and butter in a medium saucepan on high heat (discard the vanilla bean pods). Whisk continuously until mixture comes to a boil. Reduce heat and simmer, whisking until mixture is thick and coats the back of a wooden spoon or sticks to a wire whisk.
- Pour pudding into serving dishes to cool, 5-7 minutes, before serving. Pudding may be served warm or cold.
