You may know them as hamburger steaks, kebab, or even meatballs. But, cutlets are a worldwide phenomenon that are deliciously easy to make. With these Crispy Beef Cutlets a few special ingredients make them super moist inside. And, the breaded coating ensures they are perfectly crisp on the outside when you cook them. Serve these cutlets with potatoes and veggies for an extra special dinner.

Mixed into the ground beef for these cutlets is some mayonnaise and some white bread. Combined with the other ingredients it’s almost like having a burger inside the patty. If you’re thinking this sounds delicious it is! But, it also means the cutlets are never dry and retain a lot of moisture even during cooking.

The real magic happens when you coat the patties in breadcrumbs. Because the patties are already moist the breadcrumbs stick to them easily, creating a dredge. When fried in the skillet they get a crispy exterior that contrasts with the tender inside of each cutlet.

To keep it simple we’re using a food processor to chop the onion finely and combine the first ingredients. If you want to do this by hand you can, just make sure the onion is either grated or finely diced.

This recipe not only uses bread crumbs for the outside, but there are slices of white bread in the meat mixture as well. You can use any variety you want here, even stale bread, as the slices will be soaked in water before you add them in. This makes the cutlets extremely moist and tender!

This recipe uses 1 1/2 pounds of beef, which is just about perfect since many groceries tend to carry this size from the in-house meat department. If you’d rather use ground turkey you can since the other ingredients ensure these Crispy Beef Cutlets turn out moist every time.

Ingredients
  • 3 slices white bread
  • 1 small onion, cut into 4ths
  • 3-4 garlic gloves, pressed
  • 1/4 cup mayonnaise
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 ½ lbs ground beef
  • 3/4 cup Italian breadcrumbs
  • olive oil for sautéing
Preparation
  1. Soak bread slices in water for 10 minutes. Wring bread out and discard water. Set aside.
  2. Add onion and garlic to food processor. Pulse until fine in texture. Add in mayonnaise, egg, Italian seasoning, salt, and pepper. Pulse until uniform in color. Add in bread and pulse again.
  3. In large bowl mix this with beef by hand. Or add to food processor changing blade to mixer. Mix only until just combined. Form into 12 balls. Add breadcrumbs to medium bowl. Roll each ball in breadcrumbs, flattening as you do to make small patties.
  4. Heat oil over medium heat. Cook 3-5 minutes on first side then flip and cook 3 minutes on the other side. Cook about 3-4 in pan at a time. Place on paper towel-lined plate to drain.
  5. Transfer cutlets to serving dish. Serve with bread, potatoes, or salad.
