Those two ingredients are eggs and cream cheese, and the secret is in how they’re brought together. Processing them in a blender aerates the eggs, ensures the mixture is totally smooth, and gives you a soft and fluffy pancake texture even though there’s no flour involved.

  1. Add eggs and cream cheese to the jar of a blender. You can add a little salt or vanilla if you wish. Blend until completely smooth. Let batter rest while you heat a skillet over medium heat..
