The original rice krispie treat is a dessert that people have been turning to for generations. The recipe was first produced by the Kellogg cereal company in the 1930s and in no time it became a family favorite, spread throughout the country on the back of the cereal box. Gooey marshmallows with crisp and crunch cereal– what’s not to love? While the classic recipe will always be tried and true go-to, I’ve been experimenting with some other versions and had to share my new favorite: Coconut Krispies.

The recipe sticks pretty darn close to the original, with the addition of some sweetened shredded coconut. I highly recommend you toast the coconut on the stove top for a few minutes to get that lovely golden color and pump up the nutty flavor. The rest of the process can be done in the microwave to keep things super easy, or you can melt the butter and marshmallows on the stovetop if you prefer.

There’s no baking necessary for these bad boys, but you will want to allow time for the treats to fully cool before you slice them. Whip up a batch for a family picnic, after school snack, or church potluck. A dessert this tasty is sure to be a smash hit on any occasion. Give the recipe a try and see for yourself!

Ingredients
  • 5 tablespoons butter
  • 16 oz mini marshmallows
  • 6 cups rice krispies cereal
  • 2 cups sweetened shredded coconut, divided
Preparation
  1. Line a 9x13-inch dish with parchment paper and set aside.
  2. Optional: In a small skillet, toast coconut over medium heat. Stir constantly to prevent burning and remove once coconut is slightly golden.
  3. In a large microwave-safe bowl, add butter and marshmallows and microwave in 30 second increments, stirring between, until fully melted.
  4. Stir in cereal and 1 ½ cups coconut until evenly coated.
  5. Spoon mixture into the prepared dish and press into an even layer with a greased spatula. Sprinkle remaining coconut on top and press into the krispies.
  6. Allow treats to fully cool before slicing.
