So how does the lemon meringue center become clear? The answer is a simple one: gelatin. These pies are already one of the worst kept secrets among the lemon meringue lovers out there. To make the crust, you are going to need egg wash, 1 1/2 cups of plain flour, 2 tablespoons of powdered sugar, 1/2 teaspoon of salt, a beaten medium egg, and a cup of chilled butter.

The meringue is made with a 1/2 tablespoon of lemon juice, four fresh egg whites that are kept at room temperature, seven tablespoons of water, and a cup of caster sugar. As for the filler? Grab a teaspoon of lemon extract, a tablespoon of citric acid, 2 1/2 cups of water, 1 1/2 cups of caster sugar, and 2 1/2 tablespoons of gelatin.
