So how does the lemon meringue center become clear? The answer is a simple one: gelatin. Basically, the pie is made of skin, cartilage, and bones from animals, which creates a clear Jell-O, or gelatin! And you will still be using lemon meringue topping like usual. These pies are already one of the worst kept secrets among the lemon meringue lovers out there. To make the crust, you are going to need egg wash, 1 1/2 cups of plain flour, 2 tablespoons of powdered sugar, 1/2 teaspoon of salt, a beaten medium egg, and a cup of chilled butter.
The meringue is made with a 1/2 tablespoon of lemon juice, four fresh egg whites that are kept at room temperature, seven tablespoons of water, and a cup of caster sugar. As for the filler? Grab a teaspoon of lemon extract, a tablespoon of citric acid, 2 1/2 cups of water, 1 1/2 cups of caster sugar, and 2 1/2 tablespoons of gelatin.
