
If you’re not afraid of a retro recipe, then you just might love our Cherries Jubilee Chicken. Inspired by the classic flambéed dessert, this dish transforms the classic treat into a delicious main course. While our version doesn’t involve lighting anything on fire, it sure is packed with flavor. Juicy chicken breasts are marinated to perfection and baked in a sauce that is going to have your mouth watering. Let’s get into how this vintage dish is made…


We start things out with the marinade. Cream sherry provides a warm and nutty base flavor, that’s then enhanced with garlic powder, minced onion, and some classic salt and pepper. Add a splash of olive oil to really lock that moisture in and pour it over the chicken. Let those chicken breasts soak up the goodness for about 3-4 hours, then it’s time to bake ‘em up!


Right before baking, mix up the final sauce. Dark cherries with their juices and a full bottle of chili sauce (we used Heinz) come together for a sweet and spicy combo. Pour it over the chicken and it’s time to bake! See, that wasn’t too hard. Your kitchen is going to smell heavenly as this meal bakes, but make sure the chicken comes to 165 degrees before removing from the oven. Serve this up over rice, mashed potatoes, or even noodles to soak up every last drop of that tasty sauce.

Ingredients
- 4 boneless skinless chicken breasts
- ½ cup cream sherry
- ⅓ cup olive oil
- 1 tablespoon minced onion
- 1 teaspoon garlic powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 ( 12 oz) bottle chili sauce
- 1 (13.5 oz) jar dark cherries in juice, pitted
Preparation
- Add chicken breast to a large baking dish. Mix together cherry, olive oil, onion, garlic powder, salt, and pepper and pour over chicken. Flip breast to fully coat.
- Cover dish and marinate in the fridge for 3-4 hours.
- When ready to bake, preheat oven to 350 degrees F.
- In a small bowl, mix together chili sauce and cherries with the juice. Pour mixture over the chicken.
- Cover dish with foil and bake for 45-55 minutes or until chicken internal temperature reaches 165 degrees F.
