Sometimes the only thing you need to really elevate your dinner is a special sauce. So when you’ve got the main figured out — whether it’s chicken or beef or pork — you can turn to a simple pan sauce to really make it an event, without much added time. This Caramelized Mushroom Parmesan Sauce is just the ticket. With just a few ingredients and a few minutes, you can take a basic dinner to something spectacular.

Ingredients
  • 1/4 cup olive oil
  • 1 shallot, diced small
  • 2 garlic cloves, minced
  • 1 tablespoon fresh thyme leaves
  • 1 lb. mushroom medley, quartered (crimini, shiitake, oyster, etc.)
  • 1/4 cup white wine
  • 1 cup heavy cream
  • 1 cup Parmigiano cheese, grated
  • 2 tablespoon fresh chives, minced
  • Kosher salt and freshly cracked black pepper, to taste
Preparation
  1. Preheat a wide saute pan over medium high heat. Add olive oil and mixed mushrooms. Stir mushrooms until they are coated in oil and cook for 5 - 6 minutes.
  2. Add shallots, garlic and fresh thyme to the pan. Cook until garlic starts to brown. Season with salt and pepper.
  3. Reduce heat to low, then deglaze with wine. Scrape up the browned bits.
  4. Add heavy cream and parmesan cheese to the sauce. Let cook until cream thickens and sauce coats the back of a spoon. Taste for seasoning and garnish with chives.
  5. Enjoy!
