18m cook time
Ingredients
- 1/4 cup olive oil
- 1 shallot, diced small
- 2 garlic cloves, minced
- 1 tablespoon fresh thyme leaves
- 1 lb. mushroom medley, quartered (crimini, shiitake, oyster, etc.)
- 1/4 cup white wine
- 1 cup heavy cream
- 1 cup Parmigiano cheese, grated
- 2 tablespoon fresh chives, minced

Preparation
- Preheat a wide saute pan over medium high heat. Add olive oil and mixed mushrooms. Stir mushrooms until they are coated in oil and cook for 5 - 6 minutes.
- Add shallots, garlic and fresh thyme to the pan. Cook until garlic starts to brown. Season with salt and pepper.
- Reduce heat to low, then deglaze with wine. Scrape up the browned bits.
- Add heavy cream and parmesan cheese to the sauce. Let cook until cream thickens and sauce coats the back of a spoon. Taste for seasoning and garnish with chives.
