Start off by tossing the cubed chicken in olive oil and season with paprika, garlic powder, chili powder, salt, and pepper. You’ll then tightly pack the chicken onto your skewers to keep it nice and juicy. Pop them in the oven while you prepare the sauce. Mayo, sweet Thai chili sauce, honey, sriracha, and rice vinegar all get whisked together until smooth. Brush the sauce on the chicken and return the skewers to the oven for a couple more minutes to let that sauce bake on.

Ingredients
  • Skewers, soak in water if using wooden skewers
  • 2 pounds chicken breasts, boneless, skinless
  • 2 tablespoons olive oil
  • 1 ½ teaspoons paprika
  • 1 ½ teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Sauce
  • 1 cup mayo
  • ½ cup sweet Thai chili sauce
  • 2 ½ tablespoons honey
  • 3 teaspoons sriracha
  • 1 teaspoon rice vinegar
Preparation
  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper. Soak skewers for 20 minutes if using wooden skewers.
  2. Chop chicken into bite-sized cubes and place in a large bowl.
  3. Drizzle chicken with oil and add seasoning. Toss until evenly coated.
  4. Tightly pack chicken onto skewers and place on baking sheet.
  5. Bake chicken for 18 minutes while you prepare sauce.
  6. Combine all sauce ingredients in a small bowl.
  7. Brush sauce over the skewers and return to the oven for 2-7 more minutes or until internal temperature reaches 165 degrees F.
  8. Serve hot and use remaining sauce for dipping.
