
It’s hard to go wrong with any kind of apple dessert. From pie to crisps to dumplings, sweet and saucy apples are always a winning flavor combo. The recipe we have for you today takes those beloved flavors and gives them a little twist!
Apple pie enchiladas are made using flour tortillas stuffed with tender apple pie filling and drenched in a sweet buttery sauce. The enchiladas are then baked to golden brown perfection. They’re amazing served hot with a dollop of whipped cream or a scoop of your favorite vanilla ice cream. The combination of the warm tortillas and the sweet, cinnamon-infused apple filling makes it absolutely irresistible!


You’ll need only seven ingredients to put together this recipe (and one of them is water!). We’ve gone with a canned apple pie filling to simplify the process, but you’re welcome to go with homemade if you have fresh apples on hand. Using flour tortillas, spoon a line of the pie filling down the middle and roll tightly. Place them in an 8×8 baking dish seam side down. Once the dish is full, you’ll pour a homemade brown sugar sauce over the top and pop them in the oven for about 25 minutes or until golden brown on top.


These enchiladas are best served warm and we highly recommend adding a scoop of ice cream to the top. Apple Pie Enchiladas

Ingredients
- 21 oz can apple pie filling
- 6 medium-sized flour tortillas
- ½ cup white sugar
- ¾ cup brown sugar
- ⅓ cup water
- ⅓ cup butter
- 1 teaspoon cinnamon
Preparation
- Preheat oven to 350 degrees F and grease an 8x8 baking dish.
- Working one at a time, spoon the apple pie filling into the tortillas, roll tightly, and place in the baking dish with the seam side down.
- In a small saucepan, add the white sugar, brown sugar, water, butter, and cinnamon. Bring to a boil and then simmer for 3-4 minutes while stirring constantly.
- Remove sauce from heat and pour over the prepared enchiladas.
- Bake for 25-30 minutes or until they’re just starting to brown on top.
- Serve warm with whipped cream or ice cream.
