Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups granulated sugar
  • 1 cup 7Up
  • 1 cup canola or vegetable oil
  • 2/3 cup sour cream
  • 2 eggs
  • 1 lemon, zested
  • 1 lime, zested
  • 1 teaspoon vanilla extract
Glaze
  • 1 cup butter
  • ¼ cup 7Up
  • 4 cups powdered sugar, sifted
  • 1 lemon, zested
  • 1 teaspoon vanilla extract
Preparation
  1. Preheat oven to 350 degrees and grease a 13x18 inch sheet pan with a lip.
  2. In a small bowl, sift together flour, baking soda, and salt until well combined.
  3. In a large mixing bowl, mix together sugar, 7up, oil, sour cream, eggs, lemon zest, lime zest, and vanilla until light and airy.
  4. Slowly mix the dry ingredients into the wet until just combined.
  5. Transfer batter to the prepared sheet pan and use a spatula to spread to the edges if needed.
  6. Bake for 20-25 minutes or until an inserted toothpick comes out clean.
  7. Start glaze about 5 minutes before cake is done baking. In a small saucepan, combine butter and 7up and bring to a gentle boil. Add sifted powdered sugar, lemon zest, and vanilla and whisk until smooth.
  8. While still hot, pour glaze over the cake and allow time for it to absorb.
  9. Allow cake to cool for 30 minutes before serving. Refrigerate any leftovers.
