This budgeting wizard is here to teach us their ways, as they have learned how to survive on $1 per day.
The British woman is sharing the secrets and you are certainly going to want to pull up a chair. Manchester native Kathryn Leech decided to make this her daily food budget. We are beyond curious. How on earth did she possibly adhere to this seemingly impossible standard?
“With the current cost of living crisis and the constant rising inflation, a lot of people are having to cut back just to get by,” Leech said in an interview. “For a lot of people it doesn’t matter how much they budget; the real issue is that the average cost of living is consistently rising but salaries aren’t at the same rate.”
Her entire profile is dedicated to these sorts of hacks and we cannot wait to see what other tips she has uncovered.
“This is quite an extreme food budgeting challenge, but it was interesting for me to see if it’s possible to live on a budget this small which some people might actually have to do,” she told NeedToKnow.online. For starters, she did much of her shopping at Aldi.
This is a common practice for those who have to make every dollar stretch as far as it can. “I ate the same thing every day for the whole seven days,” she shares. “I had toast, kidney beans and pepper wraps, and tuna and sweetcorn pasta.” It had to be so hard to stick with this budget for a week straight.
Our hearts go out to the people who are forced to live this way on a consistent basis. “The hardest part was eating the same food every day. It wasn’t filling,” Leech recalls. “It also wasn’t healthy as there was no way I could get enough nutrients in, and I definitely didn’t eat enough calories.”
There was one bonus that she was sure to mention, though. “However, I made the food in bulk, so it cut down on cooking time as I only had to cook a couple of times for the whole week, and I just warmed it up each day.”
