Pomegranate and Pear Salad with Pomegranate Vinaigrette

(makes 6 servings)

Ingredients

Salad

  • 8 cups mixed greens
  • 1 ripe pear, cut in half
  • 1/3 cup pomegranate seeds
  • 2 oz Gorgonzola cheese
  • 1/3 cup walnuts
  • Fresh cracked pepper to taste

Pomegranate Vinaigrette

  • 1/2 cup pomegranate juice
  • 2 tablespoons red wine vinegar
  • 1-2 teaspoons Dijon mustard
  • 1/4 teaspoon salt
  • 1 tablespoon honey
  • 1/2 cup extra virgin olive oil

Directions

  1. Cut the pear into fans, then slice again on the diagonal
  2. Toss together salad ingredients except pepper in a decorative bowl
  3. For the vinaigrette, combine all the ingredients in a food processor, or whisk together vigorously by hand. Constantly taste and adjust seasoning as desired, then transfer to a bottle for pouring.
  4. Serve and enjoy!
