Blueberry Cream Pie
Ingredients
- 1 cup sugar
- 3 tablespoons flour
- 1 1/4 cups heavy cream
- 1 large egg
- 1 teaspoon vanilla
- 1 teaspoon lemon juice and zest
- 1/4 teaspoon salt
- 3 cups blueberries
- 1 pie shell
- For the topping:
- 3 tablespoons flour
- 2 tablespoons sugar
- 2 tablespoons butter
Directions
- Preheat oven to 350°F. In a large bowl, meat together the sugar and flour with cream, egg, vanilla, lemon juice and zest, and salt.
- Add blueberries and gently fold. Pour filling into prepared pie crust and bake 40 minutes.
- While pie bakes, make the topping but cutting the butter into the flour and sugar until crumbly. Sprinkle over pie and continue baking for 20-30 more minutes until center is set.
- Chill pie until solid enough to cut.
