Pumpkin Spiced Chicken Wings

These spiced chicken wings were made as a test to see which classic appetizer makes for the best pumpkin spiced appetizer. Chicken wings can handle any spice you throw at them. They have so much flavor of their own that they truely transform with any marinade. I dry rubbed these chicken wings in a pumpkin pie spice cajun seasoning that knocked my socks off. Bake these in the oven for 25 – 30 minutes or until nice and crispy. Serve these up with your favorite barbecue sauce, preferably a chipotle or blueberry sauce.

I love dry rubs because they do so much work without any oil. The secret to a delicious dry-rubbed recipe is giving your dry rub time to penetrate the meat. With these marinades, I typically like to toss these overnight and leave them to dry on a wire rack over a sheet tray in the fridge for extra crispy flavor. Stick these in a ziploc bac and shake up with the spices. Easy dinner for the next day.

Chicken wings can be cooked, pre-cooked and reheated and STILL be juicy. I sometimes feel like the average family is afraid of cooking chicken wings. They are cheap, delicious, and take hardly no time to make. The secret is in the bone which prevents the chicken from losing all it’s moisture. Wings have a lot of flexibility in cooking, so don’t be afraid of overcooking them.

The art of the chicken wing is one that we are only just discovering with different marinades and dry rubs and wing sauces and dipping sauces, so get expirimenting. Pumpkin spiced chicken wings is solid recipe and one of the true favorites from my pumpkin spice experiment. The flavors deepen the flavor of the chicken and add a fun kick with the cayenne pepper. Toss these with lemon pepper, buffalo, or dip them in ranch.

Ingredients
  • 3lbs. chicken wings, patted dry
  • 2 tablespoons vegetable oil
  • 2 tablespoons pumpkin pie spice
  • 1 tablespoon smoked paprika
  • 1 tablespoons sweet paprika
  • 1 tablespoon kosher salt
  • 1 teaspoon mustard powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • BBQ sauce, for dipping
Preparation
  1. Preheat the oven to 425 ºF and prepare a parchment-lined sheet tray.
  2. Combine all spices in a bowl and set aside. Toss all the wings in a large bowl with vegetable oil and spice. Thoroughly rub the spices all over the wings, then arrange wings on the prepared baking tray.
  3. Bake wings for 30 - 35 minutes or until the thickest part of a few wings registers at 175 °F. Let rest for 5 minutes.
  4. Serve with BBQ dipping or toss in sauce.
