4. Mind your racks.

For food to cook properly, hot air needs to be able to circulate freely around it. Your oven racks need to be in a different position for a roast than they do for a cake. We all know that baked goods do best in the center of the center rack, but check your oven’s manual for other suggestions. And if you have to put things on two racks, make sure the pan on the bottom rack isn’t blocking the heat of the food on the top rack!
