Grain-Free Maple Granola

For a quick and easy breakfast there’s nothing quite as good as some tasty granola. If you want to cut out some of the starchy ingredients (i.e. grains) then this Grain-Free Maple Granola is the recipe to try. A short list of ingredients and big flavor make this a great option for anyone who wants a high-protein, low carb way to start the day. And this is a wonderful recipe for those who cannot have wheat or other grains. Let’s get started on this easy granola!

Grain-Free Maple Granola

The ingredients here are limited, but they make a tasty batch of baked granola. If you want to make swaps or additions this recipe can take it. Some great additions are dried fruit, shelled sunflower seeds, peanuts, walnuts, cashews, hemp seeds, or macadamia nuts.

This recipe is heavy on the nuts as they crisp up in the oven and give the illusion of oats or wheat flakes. There’s also some lovely large flake coconut in the mix as well, but not everyone loves coconut. To replace this ingredient you’ll need to substitute an equal amount of sliced almonds to get a similar texture in the final result.

We’re not adding any refined sugar to these ingredients. The sweetness and flavoring instead comes from some ground cinnamon whisked into some pure maple syrup. We aren’t using pancake syrup here, only the real deal! Maple syrup adds nutrients to your dishes and contains iron, zinc, and potassium- among many other minerals.

The cinnamon is a great addition and you can add other spices if you want. And, don’t forget to add the salt- a generous pinch. It really sets the flavors off well.

In this recipe the maple lends a rich flavor to every bite. We only need a small amount here and combined with the high fiber of the nuts the overall net carbs are low for a granola at only 7 grams per serving.

To bake this granola spread it on a lined baking sheet and pop it into the oven, stirring once to make sure it bakes evenly. The heavenly aroma of this sweet, maple treat will fill your kitchen. For me this added mightily to the anticipation!

Give this a bit of time to cool off then break it up. Serve this over yogurt or eat it on its own.

The crunch and the flavor here are unsurpassed. I didn’t miss the grains in this granola at all. But, on the downside (if you can call it that) I did find myself sneaking handfuls of this amazing mixture all morning- long after breakfast was over!

Ingredients
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • large pinch salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons real maple syrup (not pancake syrup)
  • 1 1/2 cups unsweetened coconut chips or large flakes
  • 3/4 cups sliced raw almonds
  • 3/4 cups pecans
  • 1/2 cup untoasted green pumpkin seeds (pepitas)
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut oil, melted
Preparation
  1. Preheat oven to 300˚F. Whisk together cinnamon, nutmeg, salt, vanilla extract, and maple syrup in mixing bowl.
  2. Add remaining ingredients to mixture and combine well. Spread on parchment-lined rimmed baking sheet in an even layer. Bake for 15-20 minutes or until nuts are just beginning to brown. Stir once or twice during baking. Do not overbake.
  3. Allow granola to cool completely before serving. Eat with milk or on top of yogurt, oatmeal, or your favorite porridge.
