Toffee Nut Brownies

Ask anyone how they like their brownies and you’re likely to get a lot of different answers. Some prefer a chewy brownie, some love a fudge-y or cake-y one. These toffee nut brownies have the best of all worlds because their candy-nut topping gives them a wonderful texture, not to mention the taste!

To make these brownies you’ll of course need to make up some brownie batter and bake it. This one has chocolate syrup in the mix for a rich and moist brownie.

The second step is to make a toffee topping. What’s the difference between toffee and caramel? Well toffee is harder and usually doesn’t contain cream. In this case we’re using pre-made toffee bits that you can get in the baking aisle of the grocery. It’s the ultimate in convenience. For an even easier shortcut you could use a brownie mix, too.

The topping also has mini chocolate chips. The mini ones I find melt better than the regular-sized ones. Then there’s the nuts. We’re using pecans here but you can substitute any nut you like instead. Peanuts, almonds, and hazelnuts are all good choices for this recipe.

Once you have your topping mixed up then spread it over the brownies while they are hot from the oven. This ensures that a delicious crust of chocolate and toffee forms on top as the brownies cool off.

It can be hard to wait, but once these have sat for about an hour they are absolute perfection in terms of taste and texture.

Ingredients
  • 1/2 cup butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups chocolate syrup
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon cocoa powder
  • 1 1/2 cups toffee bits
  • 1 cup miniature chocolate chips
  • 1 cup coarsely chopped pecans, toasted
Preparation
  1. Preheat oven to 350˚F. In a large bowl cream together butter and sugars. Add eggs in one at a time, then add vanilla and chocolate syrup.
  2. Sift cocoa powder into wet ingredients. Then stir in flour. Pour into a greased 9”x13” baking dish. Bake for 30 minutes or until set in the middle.
  3. While brownies are baking combine toffee bits, chocolate chips, and pecans. As soon as brownies are done remove from oven and sprinkle evenly with toffee mixture.
  4. Allow to cool for 30-60 minutes before cutting into squares to serve.
