Spinach Vidalia Dip

French onion dip has long had a reputation as being one of the tastiest dips around. The sour cream is a wonderful base for the sweet, caramelized onions. Now let’s take this concept further. By using Vidalia onions we’re starting with a sweeter onion. Then we’re not only cooking it down as you might for French onion dip, we’re also adding some spinach to the mix for even more flavor and color. Because of these extra touches this Spinach Vidalia Dip has much more flavor than your average chip dip. To elevate this appetizer even more you can offer some crostini as well as crackers for an upscale version of this yummy starter. And, despite the fact that we’re making this from scratch, the hands on time is still pretty low.

There aren’t a ton of ingredients in this dip and yet it somehow turns out amazing each time. Of course, anything with sour cream in it is gonna be good!

We are caramelizing the chopped onions for this dip for about 20 minutes. We don’t need them very done, but we do need them to become darker, softer, and sweeter and that can only happen with time in the skillet.

Then you add in the spinach to wilt it before mixing the onions and spinach with the rest of the ingredients.

A few herbs and spices and some freshly chopped chives give this dip even more flavor.

Ingredients
  • 3 tablespoons salted butter
  • 2 Vidalia onions, chopped
  • 1 (5 oz) pkg fresh baby spinach, coarsely chopped
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 (16 oz) container sour cream
  • 2 tablespoons chopped fresh chives
Preparation
  1. Melt butter in skillet over medium heat and add onions. Cook for 20 minutes then add spinach. Cook for 1-2 minutes or until spinach is wilted. Add salt and pepper to taste. Allow to cool.
  2. While that cools combine remaining ingredients in mixing bowl. Add cooled onions and spinach to sour cream mixture and stir well. Taste and add more salt and pepper if needed.
  3. Refrigerate for 20 minutes before serving with chips, crackers, bread, or veggies.
