Ingredients
  • 4 Yukon gold potatoes, peeled and cubed
  • 2 zucchini, quartered and cubed
  • 1 red bell pepper, diced
  • 1/2 cup diced white onion
  • 1/2 cup Italian bread crumbs
  • 1/4 cup olive oil
  • 1-2 cloves garlic, sliced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon onion powder
  • salt and pepper to taste
  • 1/2 cup grated parmesan cheese
Preparation
  1. Preheat oven to 400˚F. Toss together potatoes, zucchini, bell pepper, onion, bread crumbs, olive oil, garlic, paprika, onion powder, salt, and pepper in 9”x13” pan or baking dish.
  2. Bake for 30 minutes then add cheese on top. Bake for another 20 minutes or until cheese is browned and potatoes are fork tender. Cover with foil if top browns before veggies are done.
Too easy to taste this good.
