White Bean Dip

Ingredients

  • 15oz can white beans
  • 2 tablespoons sweet onion, finely chopped
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 1 clove garlic
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1-2 tablespoons water, as needed
  • ½ cup mozzarella, for topping
  • 2 tablespoons parmesan, for topping

Preparation

  1. Preheat oven to 400 degrees F and grease a pie dish or 8x8 baking dish.
  2. In a large food processor, add all ingredients other than the topping cheeses. Pulse until smooth and evenly combined. Add more water a tablespoon at a time if the consistency is too thick.
  3. Spoon bean mixture into the prepared dish and top with the remaining cheese.
  4. Bake for 25-30 minutes or until bubbling and golden brown.
  5. Serve hot with tortilla chips or crackers.
