Ingredients

  • 2 lbs ground beef, 85% lean
  • ½ yellow onion, diced
  • 4 cloves garlic, diced
  • 1 (8 oz) can tomato sauce
  • 2 tablespoons chili powder
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon ground oregano
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1/4 cup yellow masa harina
  • ½ cup water
  • Toppings: sour cream, tortilla chips, avocado, shredded cheese

Preparation

  1. In a large pot, add ground beef and onion and cook over medium heat until meat has browned. Stir in garlic, all seasoning, and tomato sauce, and cook for 2-3 more minutes.
  2. Move meat mixture to crockpot. Add beans and diced tomatoes with juices.
  3. In a small bowl, mix masa harina and water together until smooth. Add the mixture to the crockpot and stir everything together.
  4. Set crockpot to high to cook for 2-3 hours or low to cook in 4-6 hours.
  5. Serve warm and top as desired.
