Ingredients
  • 1 red bell pepper, de-seeded and chopped
  • 2 cups red chili peppers, chopped (include seeds)
  • 1 yellow onion, chopped finely
  • 1 cup apple cider vinegar
  • 1/2 cup raw sugar
  • 3 tablespoons minced garlic
  • 2-3 teaspoons yellow mustard seeds
  • Optional: 1 teaspoons cayenne pepper
Preparation
  1. Add all ingredients to a large pan and heat to medium - high heat. Stir until the sugar dissolves, then bring ingredients to a boil.
  2. Reduce the heat to low and simmer the mixture for approximately 30 minutes, or until liquid is reduced and absorbed to create a thick, colorful relish.
  3. Remove hot pepper relish from the heat and allow it to settle. When reduced to room temperature, spoon mixture into a mason jar or glass container, discarding any excess liquid. Refrigerate and use as needed. The Hots can keep for up to a month.
