For the meatloaf:
  • 2 lbs ground beef
  • 2 eggs
  • 1 tablespoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup seasoned bread crumbs
  • 1 teaspoon dried onion
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3/4 cup chunky salsa
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 tablespoon chopped fresh parsley or cilantro
For the glaze:
  • 3/4 cup ketchup
  • 1/3 cup packed light brown sugar
  • 2 tablespoons soy sauce
  • Pinch chili powder
  • 1/4 teaspoon ground cumin
  • 1 bell pepper, seeds removed and sliced into rings
Preparation
  1. Preheat oven to 375˚F. Combine meatloaf ingredients in large bowl. Press into 8”x5” loaf pan.
  2. Combine ketchup, brown sugar, soy sauce, chili powder, and cumin for glaze ingredients. Brush half of sauce over top of meatloaf. Bake for 45 minutes.
  3. Carefully remove from oven and place pepper rings on top. Return to oven to bake for 15 more minutes.
  4. Allow to rest for 5 minutes then slice to serve.
