Ingredients
  • 3 medium cucumbers, peeled and thinly sliced
  • 2 medium tomatoes, cut into wedges
  • 1 white onion, sliced
  • 1/2 cup apple cider or red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons granulated sugar
  • 1-2 tablespoons fresh parsley, chopped
  • Kosher salt and freshly ground pepper, to taste
Preparation
  1. In a large bowl, combine cucumbers, tomatoes, and onion. Season liberally with salt and pepper.
  2. Whisk together vinegar, oil, sugar, and parsley, in a glass measuring cup or small container and pour over cucumber mixture. Toss to coat and season to taste, if needed.
  3. Cover and chill in refrigerator at least 2 hours. Serve, and enjoy!
