Ingredients

  • 5 medium Yukon gold potatoes, chopped
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 3 tablespoons butter
  • 1/3 cup chicken broth
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Add potatoes, onions, and garlic to a large bowl. Season with salt, pepper, and paprika and toss to combine.
  2. In a large skillet over medium-high heat, melt butter. Once hot, add potato and onion mixture and cook 10 minutes, frequently turning potatoes to keep from burning.
  3. Pour chicken broth over potatoes and cover skillet. Reduce heat and cook until potatoes are tender, about 15 minutes more. Adjust seasoning as needed and serve. Enjoy!
