Slow Cooker Salsa Verde Pulled Pork

Ingredients

  • 1 (3-4 lb) boneless pork shoulder
  • 1 large white onion, chopped
  • 1 (16 oz) jar salsa verde
  • 2 (4 oz each) cans chopped green chiles
  • 2 teaspoons ground cumin
  • 2 teaspoons coriander seeds
  • 1 teaspoon dried oregano
  • 1/4 cup fresh cilantro, minced
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Place pork and onion in the insert of a slow cooker.
  2. In a small bowl, stir together salsa, chiles, cumin, coriander, oregano, and salt and pepper. Pour over meat.
  3. Cover, and cook on low until meat is fork-tender, about 5-6 hours.
  4. Remove roast from slow cooker. Skim fat from liquid. Using two forks, shred pork and return to slow cooker.
  5. Stir in cilantro, adjust seasoning to taste, and serve with tortillas and favorite taco toppings. Enjoy!
