Ingredients

  • 1 tablespoon water
  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons sesame seeds, divided
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Season chicken liberally with salt and pepper.
  2. Add oil to a large skillet and place over medium-high heat. Once hot, add chicken and sear, just until outside is browned.
  3. Transfer to slow cooker insert and sprinkle with half of the sesame seeds.
  4. In a small bowl, stir together soy sauce, honey, rice vinegar, garlic, and 1/4 teaspoon of pepper. Pour over chicken.
  5. Set slow cooker to cook 6 hours on low or 4 hours on high. Remove chicken and place liquid in a small saucepan.
  6. Stir cornstarch into 2 tablespoons of water and whisk into liquid. Cook over low heat until mixture has thickened.
  7. Pour sauce over chicken and sprinkle with remaining sesame seeds. Enjoy!
